grown in Tokay Sandy Loam

Maybe the most mysterious of vineyards I've ever seen, this place is mystical and sometimes spooky. The vines are like trees here and need ladders to be harvested. Farmed organically but not certified, the grapes were picked October 2, 2020. This was a fun pick because I got to drive the tractor while the picking crews and vineyard supervisors were spread thin throughout the valley.

Fermentation

and Elevage

This grape has very little tannin and so I set out for the best way to extract with twice daily pumpovers; sometimes 3 were done. 2 tons were fermented in 2 tanks both at 20% Whole Cluster. After primary fermentation was finished the wines were pressed together and barreled down to neutral oak barrels where full malolactic conversion took place. Fermented with 100% indigenous yeasts. Contains sulfites.
