Young vines are perfect for rose´ as they reflect our general assumptions of youth - vibrant, fruity, and expressive. Mourvedre is the other name for this Spanish variety which produced large clusters and a low skin-to-juice ratio. This pick was small and served as an experimental fermentation.
Fermentation
and Elevage
The grapes were heavily crushed by clean feet and left on skins for 6 hours before being pressed off skins into stainless steel tanks. Fermentation was slow and cool with native yeasts until both primary and malolactic fermentation were complete. The wine was then transferred to neutral oak barrels. Fermented with 100% indigenous yeasts. No sulfur added.
Very limited quantity produced.
